Halton HIGH PERFORMANCE KITCHEN concept and SAFETY
Nowadays, many restaurants never reopen after a major safety accident. The operators or owners of the property have indeed to accept not only their business interruption and the potential damages but also,the liability towards other tenants, visitors or third parties as well as unfavorable reports in the media. Safety is 'de facto' one major concern in professional kitchens.






What is the definition of Safety in professional kitchens?
The term safety in professional kitchens covers several aspects:
- fire safety
- food safety and hygiene
- accident risk for the staff.
Halton contributes to the global safety of all professional kitchens with both constructive provisions for all its products and specific solutions to directly mitigate hygiene and fire safety risks.

Halton products mitigate hygiene risks by construction
Due to several constructive provisions combined with the Capture Jet™ technology and KSA filters, Halton products mitigate hygiene risks. The Capture Jet™ technology ensures a good Air Quality, crucial for food safety and hygiene. Due to its high efficiency, the KSA filters limit the grease deposits inside the ductwork. Our constructive provisions make our products easier to clean and handle. For example, the containment volume of our canopies is made of a reduced number of parts, leading to the suppression of numerous joints as much as weak points.

Halton has been therefore the first kitchen equipment manufacturer having its products HACCP certified.

Capture Ray™ technology
One of the benefits of the Capture Ray™ technology is to limit the grease deposits in the canopy and exhaust ductwork. The hygiene of the ductwork is then at its highest level while the fire risk is considerably reduced.

Water Wash technology
The Water Wash technology has been developed to automatically wash down the filters and the exhaust plenums, without the need for removal* of the filters from the exhaust plenums. It can be incorporated into Capture Jet™ canopies as well as Capture Jet™ ventilated ceilings. The filters are then permanently clean, limiting the risk of a fire spreading through ductwork.

Halton Fire suppression systems
Halton recommands the Ansul® R-102™ fire suppression system. It is an automatic, pre-engineered system, designed specifically for professional kitchens to protect the ventilation systems associated with cooking equipment. The integration by Halton of Ansul® R-102™ system in Halton's products provides a cost efficient global solution, totally respectful of both products.
